Vegan Mince Loaf

I have to confess, I invented this recipe back when I was vegan. I would make it on Sundays for roasts or on Christmas Day (as I did not eat turkey, nor do I like nut-roast). Although I'm no longer vegan, I do still make this occasionally as it is delicious.


This makes one portion:


Ingredients:

  • 1 cup of grated carrots

  • 1 cup of vegetarian mince (I often use quorn)

  • A few slices of red pepper

  • 1/2 tomato puree

  • 1 spoonful of swiss bouillon or any other vegetable stock

  • A dash of worcester sauce

  • A handful of breadcrumbs

Method:

  1. Place the cup of mince in a pan on medium heat, and when nearly cooked add the tomato pure. Mix in and then add a spoonful of swiss bouillon.

  2. When that is sizzling away add the carrots, red peppers and a dash of worcester sauce.

  3. Once everything is cooked (usually after 15 mins), turn off the heat and add the breadcrumbs.

  4. Stir and distribute evenly in a ramekin or a small tupperware box

  5. Let the loaf sit for a few minutes to set. Finally, turn it upside down onto the plate. You should have a perfect loaf!

It is super easy and doesn't take that long!
