It may not look very appetising, but it tastes delicious! This cheap and cheerful chilli bean soup was a favourite of mine as a student. The cost to make it is approximately £6.04, so £1.51 per person (prices taken from Tesco). As it is so thick, it also makes a yummy jacket potato filling. If you don't want to eat all of the portions in one go, it also keeps and freezes really well.
I can hardly call this a 'recipe' as it is essentially 3 tins of beans mixed in one pot ..but here's how to do it.
Serving four:
Ingredients:
1 tin of mixed beans - 65p
1 tin of lentils - 75p
1 tin of baked beans - 85p
1 teaspoon of veggie stock - 50p (for 10 cubes)
A dash of Worcester sauce - 85p
2 teaspoons of tomato puree - 27p
1 tin of chopped tomatoes - 42p
1 clove of garlic - 25p
One teaspoon of chilli - £1.50 (for 190g jar)
Method:
In a large pot fry your garlic on a medium heat for several minutes
Combine your tin of mixed beans and lentils and cook for 5 minutes
Then add your baked beans and chopped tomatoes
Using an empty tin, fill half of it with water and add to the mix
Stir in your veggie stock, tomato puree and chilli
Pop a lid on the pot and leave to simmer for 15/ 20 minutes
Season with salt and pepper
Enjoy!
